Deep fried is best fried.
Take fries/ chips, oven chips just do not compare to deep fried chips.

Yeah, I will concur on those chips... they are the best. In-n-Out does them that way. Fresh potatoes, hand cut and straight in the fryer... salt on the way out.

Revealing my California biases— I thought those peas were guacamole when I first saw the green in the pic.
My wife’s gonna be surprised when she dips her taquito in that!
( And the cod-n-chips do look good... Some malt vinegar and I’m in bliss with those.)

Try doing them at home, you want them in between steak cut and French fries, soak in water for an hour or two to remove some of the starch, pat them dry with some paper towels, then deep fry them, shake off any excess fat or oil, them salt them and then a touch of malt vinegar. Amazing.

To add a little extra touch, add a little mint, not much as it’ll over power the peas.

I think the most amazing thing for me was the chips. The outside was nice and crispy with a good crunch but the inside was a warm custardy goodness. I’d never had chips like that before.

A good chip needs to be a good potato, cut and soaked then drained and dried, cooked at the right temperature in oil or fat, the seasoned.
It should be crisp but not crunchy and the centre should be fluffy and not chalky.

Mine would give me that look, but probably hold her tongue since my lab stats
tend to be better than hers.. lol
(On top of that, it all sounds so damn good.. part of it is half that I'd have to make myself to find here, even in normal times)
