In order to keep my mind off things today, I decided to spend it chopping, cooking, and stewing.

I made this today

Actually ended up using 2 bulbs of garlic. Step 1: start chopping.

Step 2: while browning onion and shallots, roast some peppers, then peel.

Step 3: brown garlic with green onions while shallots and big onions are cooking down.

Kinja'd!!!

Step 4: reduce a bunch of homemade chicken stock.

Kinja'd!!!

Step 5: add peppers and crushed tomatoes to onions and shallots.

Step 6: season and brown ground chicken, chop and brown artichokes.

Step 7: blend sauce sideways

Step 8: grab a bunch of the last basil and parsley from the garden, chop and add to sauce back in the pot, add in ground chicken, and a generous pinch of Asiago. Also added smoked paprika, a dash of cumin, s&p, herbs de Provence, possibly some other shit I’m forgetting

Finally, let it slowly simmer and continue to reduce until it’s time to make some pasta, and figure out how to actually work until it’s time to feed.

Should be pretty solid. I’ve had a few people ask me what the secret is to my tomato sauces, and it’s pretty simple— add some reduced veggie or chicken stock. Bonus when it’s the stock you made last week.

Yeah... that was kind of the point. 4 hours of chopping, cooking, and stewing to keep myself occupied in a way that doesn’t involve a computer screen.

Now I’m trying to figure out what else I can cook.

With ya on the anxiety. I’m getting a double dose of anxiety as I’m also waiting to hear back after a big job interview.

I’ll probably have a cigar with some scotchy scotch after work. Then get to anxiety cooking.
