Cut out the old piping (shut offs look to be within 20 years old), had to cut out the drain from behind the tub to get the tub disconnected. Sub floor is coming out, new floor going in, insulation (f*** blown in), new walls, pexing everything. Debating if I want to do anything crazy other than just a simple shower pan with regular shower as I’ll have EVERYTHING exposed and a full blank slate. No heated floors as a friend recommended as I never spend enough time in the bathroom as is.

Steel tubs bring the yikes.
I’m starting my bathroom demo next week, I’m hoping for less excitement
than you. It isn’t original thankfully, so it shouldn’t be too terrible.

I’m going to disagree with your friend on the heated floors. They are cheap for smaller bathrooms and mean that every fixture (read: toilet) is warm most of the time. Radiant heat is the best heat and it’s not something you’ll tear your floor out to put in later. If you’re going to tile, heat the floor!! It would have been $500 to do ours with electric heat when we were doing it, my friends and family talked me out of it and I regret it deeply.
New house has heated bathroom floors, they are glorious and only serve to reinforce that we should have put them in the old house when we had the chance.

oh and I almost forgot, if it’s the only bathroom in the house put a tub in. if you have another tub BIGGEST SHOWER YOU CAN ALL THE WAY. but I’m a shower guy so... ;)

Sounds like you want to do it right (and you might as well since you seem to have time) - why skimp out and run pex?
I also recommend you reconsider your reconsidering of the heated floor... I can think of few things that would be nicer (unless you live somewhere that doesn’t get cold in the winter).

Yup, this exactly. A tub makes it a full bath, and you do not want your house listed as having 0 full baths when it comes time to sell.

Right. The barely useable "bedroom" with a 2' wide "closet" you might have is at most tolerable. But no tub is no bueno.

I have a radiator in my bathroom. When we gut and redo the bathroom that is sure as shit being turned into heated floors instead.

Unfortunately, I’ve only got 1.5 baths and would love to rip out that cheap fiberglass tub and do a nice steam shower, but this place will be hard enough to sell when the time comes as it is.
And if that tiny closet with its own closet is what let’s you keep your bedroom count at at least 3, or better yet, 4, then do not rip it out, either.

In a pre vious home, I had a combo exhaust fan/heater ceiling light. On cold mornings, I would switch on the heater and close the bathroom door then go have breakfast. After breakfast, the bathroom was toasty warm, including the tile floor.

Could I solder it? Sure. Will pex be easier since my dad already has everything to do it? Yes. Will I probably end up going copper? Probably.
