Believe it or not, I’ve kind of gotten away from the cheese on top of things. It masks flavor. Now, some slices of a good cheddar on some Triscuits, that’s another matter...!

Tis true that cheese overwhelms many a dish but that chili looks pretty darn savory. Would eat it without cheese as well.

When I was a child, maybe 9 or 10 years old, I was visiting my grandparents in Pennsylvania and we went to Ohiopyle State Park and had a picnic lunch and they forgot to pack the peanut butter and jelly. Instead, they had big fat tomatoes from the garden and big sweet Vidalia onions and bologna. On gooey white bread with mayo. Oh, man , was that good. I was like, “ Dang ! ” Every summer when I stayed with Grandma and Pappy there was something new I’d eat and love it.
