Oppo- i recently got my PC steering wheel out of storage and got game pass to try out forza horizon. Would love to use the wheel, but i cant seem to find any setting that keeps the car stable/not snap oversteer with the slightest input. Is this something i’ll just need to get used to, or is there a way to update it (I havent used the wheel much in the past if that helps at all)

Download and re-install the G27 drivers. Windows likes to auto-update and installs something newer that does not work.
