This is my jook.
It’s really good with soy sauce and a dash of sriracha. Mom usually makes a batch after Thanksgiving with the leftover bits of turkey. Very nice on a cold winter morning.

Try black bean paste instead of soy sauce. It really ads some depth to the flavor. My family uses black bean paste when we do fish congee.
