Always wanted to make my own Coney chili. It came out better than Hormel (not an accomplishment), but it’s not quite what I was hoping for. Mac’n’cheese came out great though.

What’s your recipe?
I tried making Coney island chili from some website (I forgot which one because keep reading)
It ended up being some relatively disgusting concoction that tasted more like barbecue sauce than anything

The recipe I used: http://www.simplyscratch.com/2013/03/detroit-style-coney-dogs.html
It’s close, but like I said, it’s not quite what I was looking for. There’s something missing, but I haven’t managed to figure it out yet.

Detroit does it better.

Oh that seems like a much more concise recipe
Looks like they have two different spices list though. And I’d probably do the one without the celery salt and put in more chili powder.

Those look great. So what cheese(s) did you use?

Half Sharp Cheddar and half Monterey Jack. I’ve played with several other combinations and this one is my favorite so far.

You’re a towel

That sounds good. I like the bite of cheddar, but sometimes it can be hard to get it smooth on its own.

Yeah, the Jack mellows and smooths everything without smothering the bite of the Cheddar. Great combo.

Did you use beef heart sauce base from Kowalski’s or Koegel’s?
That’s the key.

You know, I’ve heard something about that. I’ll have to look into it.
