Perfect. People think that fall off the bone is cooked well. You really need to be able to see teeth marks when you bight. Ribs are an art.

They pull off the bone nicely. They are side ribs, but I prefer back ribs. I don’t like working around the cartridge.

It’s a southern cheese sauce. They taste better then they look.
