I ran out of charcoal. Had to use dry Hickory chunks. Its a much hotter fire all together.

On the plus side everything smells great now!

SigOther is in Japan, so I got a ribeye and will cook it French style tomorrow - sear both sides and into the oven at 400 for 4 minutes. I have a plan.

That’s probably the best way to cook meats. That technique keeps the juices in.

Nice. I want an All Clad skillet someday. For now, I do almost all of my cooking on my trusty cast iron skillet.

12 inch steel pan, but no nonstick - learn to cook without a nonstick surface. And get a saute like this, or bigger - in both cases, buy AllClad seconds - all my pans but one are seconds, and it really makes no difference (and saves a lot of money).

Don’t bother with the copper bottom stuff - it’s overpriced, and it does not heat much more evenly than the stainless. Trust me, I know.

Haha, I’ve done my research. TBH, I am thinking about going to a restaurant depot store and buying commercial quality pans.

We’ve got those stores here (mostly on The Bowery) and you can get great pots and pans for not much money.
