My wife makes this tortilla soup where she blends all the vegetables and dumps them back in the stock, making it super thick. Then, we load it with avocado, queso fresco, cilantro, chicken, and freshly fried tortilla strips. That’s what I’ll be eating in a few hours. If I am not lazy - and to use up all the avocados before they go bad - I might fry up some tortilla chips, and make some guacamole too. I love guacamole.
And to think I refused to eat avocados for years after moving to states...
