Question: what’s the most jalop of bikes?
I’m going to suggest the Velocette Veloce LE as a contender. Water cooled horizontally opposed twin engine, “monocoque” frame, shaft drive, hand starter and hand shifter. British. Lucas electrics.
And yet, I’m certain there are bikes more jalop than this...

Closest thing there is in the motorcycle world to a wagon. It’s manual, I’m pretty sure you can get it in brown, and although it isn’t a diesel, it kind of sounds like one, and it’s slow enough that you can pretend it actually is.

Short answer - An Enduro because it can do everything.
Almost longer answer - A Supermoto because hoon.

Ural, Soviet, Indestructible, looks the same as it did 30 years ago, and Jalop as hell. The Lada Niva of the bike world.
Second place would go to the MZ 250, because it’s East German, and it reminds me of a Wartburg or a Trabant.
