It’s quiche... Sort of.

It’s for the office in the morning. It was my turn and I wanted to prove I could do something better than donuts or kolaches.

Morning update: IT’S GOOD! My coworkers love it. Should have made a third quiche.

You should try crust-less quiche. It’s really good too.

Also. Same crust as a quiche. layer some Dijon mustard on the bottom. Layer of grated cheese (an old Comté, like 18 months or more is perfect), layer of tuna, cover with tomato slices. Enjoy!

It’s actually really easy to do. Easier than a regular quiche.

Also for a crustless one, a glass cake pan is to be used.

you mean a frittata?

Every Sunday I make a week’s worth of this for breakfast in muffin cups. It microwaves well and it’s delicious.

The difference is that we don’t cook it in a pan first. Directly in the oven.
