Wouldn’t the car thing be really easy to test just using a racing sim and a wheel mapped backwards?

Sounds interesting, but much easier than a reverse-steering bicycle. Steering on a bike affects balance. With a car, you can put in the wrong input, think about it for a split-second, then correct. All without falling down.
I drove a forklift for a while. Getting used to steering from the rear wheels is also a challenge, but not nearly as hard as riding a jacked-up bike.

I mean I think so? but then again it might not be able to be fooled, in that case just spin whatever you have bolted to your wheel and drive it from the front.
