A while back, I !!!error: Indecipherable SUB-paragraph formatting!!! about my favorite pizza in my town, Madison, WI: !!!error: Indecipherable SUB-paragraph formatting!!! . Well, turns out the oppo world is a small one, and the chef/owner of the place saw my post. I liked them on facebook a while back, which is nice because I get to see all the food porn they're constantly posting. But it also makes me eat too much pizza.

!!! UNKNOWN CONTENT TYPE !!!

Today when I popped on to facebook, I saw the picture above. It was their special last night, so I guess I missed it, but it looks nuts. It's got carnitas, chorizo, smoked gouda, red onion, zucchini, and green harissa. Dang.

In the name of gratuitous pizza porn, here are more pictures from their website and facebook.

Prosciutto, kalamata olives, feta, roasted red peppers, pesto and oregano.

Fermented 800 year old squash sauce, black trumpet mushrooms, roasted sweet potato, lardo, pumpkin seed oil.

Manchego, charred onions, Arbequina olives, shaved jamon Iberica, romesco sauce.

Adobo style acadian redfish, red onion, roasted tomatoes, scallions, chili aioli, cilantro and corn shoots.

Ginger chicken, shiitakes, scallions, jalapeños, and chili sauce.

2 year aged Prosciutto, spinach, roasted red peppers, kalamata olives, chèvre, and caramelized onions.

Chili oil, colby caliente, smoked gouda, ricotta, purple potatoes, calabrese chili peppers, scallions, roasted garlic.

Duck mole, herbed queso fresco, chili cherries, roasted poblanos, calabrese chili peppers, and creme fraiche.

Eggs, Canadian bacon, smoked gouda, mushrooms, onions, green bell peppers, roasted red peppers, and jalapeno pesto.

Duck confit, dunbarton blue cheese, shiitake mushrooms, preserved lemon, pomegranate, and micro greens.

Saucisson sec salami, n'duja, roasted hazelnuts, smoked gouda, crimini mushroom, roasted celeriac, and micro greens.

Anyway, that's just specials from the last couple months. It's crazy. Oh man. Lordy.

I like a decidedly much low(er)brow approach to pizza. Give a me a good old Mushroom and Pepperoni and I'll be happy.

They do your basic pick-your-toppings pizza too. They just go wild on the specials. The first time I went there I got a basic pepperoni pizza. Well, with pepperoni from a fancy local butcher, calabrese chili peppers, and fresh basil.

800 year old squash sauce?! whaaa how? These all look amazing tough.

Looking forward to my leftovers today - The lady and I did a home made pie last night - Roasted peppers, shiitake mushrooms, pancetta, goat brie, arugula and shaved Parmesan on lightly oiled whole wheat dough.

I don't think it's literally 800 years old. It's just a fermented squash deal. Kinda like Chinese "thousand year old" eggs (which aren't actually a thousand years old).

800 year old squash is a Native American heirloom variety. The seeds were found at an archaeological dig site in MN a few years ago. Amazingly they were able to grow the squash.
