Audi's Truth In 24 docs are pretty great. Also make sure you've seen Dust To Glory.

Senna and 1 are both good movies.

Also, I just found this 20 minute documentary on my local SCCA chapter, it's pretty cool.

While not, strictly speaking, a documentary, James May's Cars of the People is excellent. There are several episodes, and, unlike Top Gear, it is quite informative. A lot of history.
