Personally, I wouldn't do it. You would have to do quite a bit of suspension and chassis work to the Mustang to make it handle decently.
I have wanted to do an AMC Eagle rallycross build for a while, someday I'll start on it.

There is a bunch of chassis work done to the car already since it is an old drag car. Took the 8 point cage out, but the plan is to put a four point in after we repair the pans. It's had front and rear frame bracing installed. I could install a sub-frame type connector; we've done that with our '66 and thicker rails. Turned the damn thing almost into a body on frame car XD
The suspension work would be a challenge since everyone has tips to lower their Mustang, but none for raising for additional travel.
And I wouldn't be going like trophy truck speed, just a little bit of dirt ;)
