I buy the wheels and tires for street use, but keep the stock wheels and tires and try and get faster with them for another year. Then next year, get some nice rubber for the wheels and drive like a boss! What's your thoughts?

Or you can just keep the stock wheels for street use and buy some nice rubber now. But either choice is a good option.

That works! Remember, if you're competing in SCCA autocrosses, then the rule for street class is plus or minus 1 inch stock diameter but maintain stock width. So, theoretically, my 16x6.5 Miata wheels can become 15x6.5 R1R-shod OP setup. But yeah, learn how to drive on shitty stock tires before getting a set of R2R's or Z2 Star Specs.

My thought process is trying to learn to drive with a car that has terrible tires that like to understeer and oversteer and learning what to do when to control that. . . if that makes sense.

Yeah that's the reason I came up with when thinking of the reason you made this post. I say go for your idea since it'll help you understand more about the car, and how to better control it.

I have been driving on these terrible tires for nearly a year, and done 8 events with them last year.
I am not really worried about classes in SCCA, I generally go there just so I can get faster. I am not very competetive. I think currently I am in STX even though I have stock wheels and tires. I might have gone with 16s for summer wheels but the tire selection isn't great, plus 17s look a lot better!

Fair 'nough! Just a heads up, Dunlop Z2's were on a fire sale last month so the Z2 Star Specs are likely due to be out by fall or winter!

I heard they will be out in september/october.
It doesn't make any sense to me to bring out a performance summer tire right before winter

For the company it doesn't make sense but for buyers it will be like buying coats in the middle in summer, the demand will be low enough to scoop them up for a good price! (So I hope!) Also they're probably waiting to see what Toyo's going to do now that the R1R's are due to expire next year due to their low tread-wear rating.

I'm doing that with my wrx! Cheapo tires on the street and practice auto x, and when I put my nto5-rs on, it's face ripping.
Just know that performance tires are much less forgiving, as in, they grip riiiiiight until they don't at all, so reaching the limit you're used to on the norm tires is a much more dangerous undertaking
