So earlier today I took my car and camera out to see whats what and this is what I came up with. (Theres some oppo in there too!) Bonus points if you can tell what and where I'm driving without cheating (Racing Archivist knows already) Hint: Its a very special road, the first ever to be on the National Register.

I used the skeleton back cover which I thought was supposed to help with wind noise but that doesn't seem to be the case. Any tips/help/advice would be greatly appreciated.

Nobody else owns a car where you live apparently. I have to drive hours to find roads that abandoned. LUCKY!

A piece of foam of the type used on handheld mics will help cut the wind noise.

Im assuming between the back of camera and case, and I should be using the skeleton back, right?

Yes, just cover the mic with it.
A small bit of rubber cement can be used to hold it in place if needed and it will just rub off with your finger if/when you want to remove it.
You can try both cases and see which provides you with the best sound, but honestly I didn't notice much, if any difference in sound with either case.
Another option is to use an external mic with a cover on it.
