This was a hard one...
For a daily driver, a newer one is nearly always a better one.
For a track car, a newer one is a much more expensive potential wreck, but they handle better.
For classics, I love the classic long-hood ones, or a non-stock bumper G-model... but in reality, a back-dated 964 is better, with improved suspension.
993 is the technically best air-cooled model, but it is also the one that cannot be back-dated, and significantly expensive to buy and maintain... and IMHO it loses it's classic looks a bit. If I am going modern, I would want water-cooling, especially to help cool turbos.
I love 996, but obviously 997 and 991 are better. I would daily-drive a 996 C4 or C4S that is in good condition and has had RMS/IMS preventative maintenance. I don't even mind the interior styling, if it is in good shape, physically. But obviously, objectively, an 997 or 991 are big improvements... money no object, the 996 gets left behind.
I would love to daily a water-cooled 911, almost any of them.
I would also love an air-cooled project/hobby/track day car... I love the classic styling the best, but they are valuable and rare classics now. A G-model SC or later Carrera, or even a 964 might be a bit easier to deal with... and can be made to look like a classic.
993 is a great car, and I see why people love it... but to me it is a great car stuck in limbo. It is no longer modern enough to be a modern daily driver... It is still quite expensive/valuable, but it isn't as classic looking as an earlier car, due to the significant changes to the body shape, but it isn't as sleek and modern and seamless as the later water-cooled cars.
