I know somewhat about how nitrous works but doesn't a huge mix of nitrous do this? Usually this is due to someone running a spark plug in there exhaust though. Correct me if I'm wrong.

You're not completely wrong, but nitrous oxide isn't flammable. The only way to get flames out of your exhaust is to dump fuel into the exhaust, which will ignite due to the heat. Some cars run very rich on purpose which is how Lamborghinis shoot flames, as unburnt fuel makes it through the combustion process and out the exhaust before being burned as it hits oxygen. Nitrous is just like a shot of pure oxygen to the engine, allowing it to boost power like forced induction.
This type of system, you are right, requires fuel and a spark and as far as I know is illegal.

Some of the old EJ engines used to run a fifth injector either in front of or behind the turbo I cant remember exactly at the time. It was used as part of the antilag system on their rally cars but was still included on the street cars just disabled, it had the effect of causing flames to shoot out the tail pipe when you're running straight pipes and have it re-enabled
