Since Miata isn't the answer to "Car to use during a Zombie Apocalypse" Which car, to you, is?
I think I'd take the Zombieland approach and find myself a nice GM SUV. Probably a 2500 Suburban with the 8.1L Vortec.
Who give a shit about fuel efficiency when you've got the world's supply of gas at your hand? Just have someone watch your back while pumping.
Room for 7 or 8 of your closest friends who survived and weapons.
High enough to actually get somewhere off road if needed, and to drive over piles of the dead undead.
Slap a snow plow on front Tallahassee style and move anything out of the way with all that torque from that 8.1L V8.
Reliable enough to go miles and miles without issue, which is good when all the mechanics and everyone around you wants to make you a human happy meal.
And the inside is nice enough to give you a little bit of comfort in the ruined outside world.
So, what's your idea zombie apocalypse vehicle?

1) It's an Unimog
2) It runs on vegetable oil, and that's going to be easier to find than gas or diesel fuel.

Most expensive cars are armored here, so one wouldn't be hard to find plus unquestionable reliability, comfort, power and fake wood.
It will protect you against spiteful survivors and their RPGs.

Gas will be in short supply. Turbo 4 can get good mileage. fairly quiet as not to alert our undead neighbors, All wheel drive in case you have to jump a median, cars are going to be abandoned everywhere. great 360 visibility. the boxy vertical sides make it easy to bolt a form of armor to keep the horde out. Enough power to get away quick. plus you can sleep in the back for a mobile zombie bunker. it has a good sized moonroof, which could be good for roof gunner lookout. plus plenty of storage space and enough towing capacity for a small trailer of whatever you may need to bring along.

and it wont be gas everywhere my friend, you want to minimize risk and that means foraging for gas as little as possible, gas goes stale, there's no electricity to pump it and there will be a run on the gas stations the second there is panic about the zombies. plus that big block chevy isnt exactly a subtle sounding motor. I almost chose a Prius V because it can run damned near silent, but lacks the ground clearance and AWD that may be needed.
Of course, I'm also the guy who would try to get through the zombie apocalypse never firing a single gunshot.

In an ideal situation, I'd have people with me and we'd take turns sleeping and driving, that way we don't have to stop.
Otherwise, I'd see if the government has any armored Secret Service 2500s still.

Where would you put all your stuff? This is why I was thinking some sort of hybrid vehicle with a bike rack /w a mountain bike on it, or if there is room, in it. A reliable old truck could do, but those are loud. I wrote Prius V but now that I think of it, those still make noise in a pinch and probably aren't that good against zombies. Not to mention being one the least cool anti-zombie vehicles.
Maybe a Hybrid sedan? Or a Hybrid Escalade/Tahoe or something. In Electric Mode they get really silent at low speeds

If I had a gasser, I would convert it to run on E85 or another alternative just in case. I would definitely stick to a mostly mechanical diesel like an old Cummins due to range, reliability, torque and bio-diesel capability. Hummer H1 with a 6BT or an 80's diesel suburban

People are forgetting a big thing: fuel. It will run out if no one is pumping it. You don't want a big block SUV that will drain the worlds supply in a month. No, you want something that will run on anything, plus pull a boat. The reason I say pull a boat, why not just live out on the water and then return to shore for supplies? But here is my choice:
Equipped with a Kaiser multi-fuel turbo diesel.
