Missed your prior post, but is there anyway in convincing her to go desktop. Bang for your buck is unrivaled and well if you can wrench on a car you can certainly build your own PC and save a considerable amount of cash.
For an editing box you could spend $600-700 and put almost any laptop on the market to shame and still have cash left over to buy a fancy tablet thing the kid are using nowadays.
Also, stay away from apple, I know I'll get flamed by people but I know many people who went to school for graphic design and A/V editing and regret wasting so much money when I show them my cheap aging PC that puts their MBPs to shame.
Edit: Oh also if you want uber nerd squeeze every penny advice, hit up hardocp.com their forums are what made me the computer geek I am today.
