Here's an idea for a specialty business, doing aftermarket modifications to new modern hot cars. What I've got in mind is kind of like AMG crossed with Morgan, tuning not for improved performance - the performance of new stock grand-tourers is really more than adequate - but for an improved driving experience. None of this stuff would be cheap or easy to manufacture, but I think there are quite a few car enthusiasts willing to pay big bucks to repair some of the more obvious flaws in their new performance cars. Here are a few services:
Digital gauges upgrade: All digital gauges removed and disposed of and replaced with easy-to-read analog gauges, white numbers and pointer on a black background, each with a chrome trim bezel. Electric locks and windows upgrade: Switches and push-button starters removed and disposed of and holes artistically filled, window cranks installed, mechanical door locks and ignition switch installed. Digital HVAC upgrade: touchscreen removed and disposed of, panel with simple, clearly labeled knobs and switches, easily operable by touch without taking eyes off road, installed. GPS/sound system upgrade: touchscreen removed and disposed of, sound system with simple, clearly labeled knobs and switches installed, packet of paper maps installed in glove compartment. Steering wheel upgrade: factory steering wheel covered with countless tricky little switches removed and disposed of, replaced with wood-rimmed Nardi item with horn button only. And then of course there is the transmission upgrade, where the race-track hi-tech robotic gear box is replaced with a stick shift...

People will pay to join the Crank Window Club
Doubt it. There are already several tuners who do nothing to improve performance, and focus on styling. Give it a shot.

I know there's a company that does it for Miatas, RS Type.

I've often wished for a company that would simply re-do the stock interior with higher quality components. I dint want a fuzzy green interior, I just want an interior that isn't 100% hideous plastic

I'm sure there are enough rich idiots out there who would pay top dollar to have removed all of the things that make their SL 65 AMG so expensive.

It hadn't occurred to me to do all those modifications on a new car that had already been radically modified once already. But I like the idea! Layer upon layer of modification.

I wholeheartedly support your endeavour! For a while now I've been think about a coach-building co that crafts with a lot of wood in visible semi-structural parts of the cabin & upper deck, a return to motoring for persons of taste & discernment .
