My mom and dad are avid, nay, obsessive gardeners. Today we received this:

I’m down with just grilling the delicatas with olive oil and salt, that’s a stand-by that’s always delicious.

Pies first. Better than using pumpkin. Cut them in half, bake them on a sheet, and scoop them out of the rind The flesh also freezes well for later use.
Also, I have a great recipe for cakes pumpkin cookies that work well with those squash. I can dig it out if that’s your thing.
My dad makes butternut squash soup that my nephews slurp up like the nectar of life.

Better than pumpkin pie you say? Welll... that’s got to be pretty damn good then. Cakes and cookies? Now you’ve really piqued my curiosity...

Yes, for pretty much anything you would use pumpkin, squash will be more flavorful.

butternut squash ravioli of which I bought a bag at the grocery store the other day. They were quite tasty. Maybe try your hand at doing something like that with whatever you have left over from making pies.

I’d cut one in half, put it face down, and bake it. Flip it right side up, and add a little butter, then bake it a little longer.

Mmm , “ butter makes it better” :) You’re thinking for th e acorns too? I’m pretty new to liking squash, since the delicatas were my gateway gourd.

Certainly worth a shot. Adding a dash of pumpkin pie spice is also an option.

Ah amazing, wife and I used to shop at aldi when we lived in germany , we’d get this euro-cut bacon that was basically chipped up into little bits and vacuum-packed. Y ou could fry it crispy and put it with eggs. SO good.

Another option is a coconut curry squash soup. Baked squash, a can of coconut milk, and some curry powder. Maybe a bit of vegetable stock.

Cut the squash into pieces of your choosing, toss in olive oil, salt and pepper and roast.
Once cooked, dress with hummus, sautéed pine nuts, chopped coriander (cilantro).
Options include plain yoghurt, dried cranberries, lemon zest, pomegranate molasses, etc.
Think Moroccan type flavours, cheers.
