Given that each car was built in one color before being swapped after the fact (at least in the case of the Golf), my guess is that any tags on the car would indicate the original single color (which is the color of the roof and d pillar).
My guess is that most people would register it based on that info, but who knows?

It is blue/purple. Color is determined by the main vehicle structure like the roof or d pillar area , not bolt on components like doors and hood.

Just check the RDW site. The plates are visible in your pictures.
It’s registered as being blue/yellow.
This one has been imported as a used car (in 2019). I'm not sure how these would be registered as new cars.

The Dutch registration system has an option to register 2 colours apparently, as it is registered as:
Color: Blue
Color 2: Yellow
Edit: I was clearly not the first one to point that out...

The actual body color is blue because you can see the roof and C pillar is the only non removable/switchable panel on there.
