Medium rare as God intended. I should have let it sit longer before cutting, but overall... Turned out excellent! I’m definitely a f an of the reverse sear method. The only thing I need to figure out is the proper way to cut the meat. I know if you do it wrong you’re chewing through muscle fibers, and if you do it right the knife does the work for you. Not really sure how to tell which direction the muscle fibers are running though...

An acquaintance of mine makes his own bacon. Apparently it’s the best thing ever, but sadly he lives in Cleveland so I’ve never had the opportunity to try his out.

Spendy, but not that bad. $40 from the little hole-in-the-wall place I've been going to since I was a kid. It helps that on Thursdays they do a half-off a single item promotion.

I’ve been salting my steaks several hours before cook time. Typically 6 - 8 hours before, letting them sit in the fridge. The salt dissolves into the steak and it tastes wonderful.

I let it sit for an hour after salting, I'll try longer next time! They were sold out of ribeyes, so I'll probably need to make my way back sooner rather than later...

I did one of these not too long ago with an 8-hour sous vide soak and a quick 30 second sear on each side.

It was tender enough to cut with a fork. 2020 could have taken me then and there, and I would have been okay with it.

No apple notes to speak of. There’s cinnamon, but that’s purely from the oodles of cinnomon sugar coating the outside. The dough was... Standard for a glazed donut? Very messy to eat, that cinnamon sugar kept falling off. 6/10.  I like the idea, but a good glazed donut would knock the pants off of these

Butcher S hop Cafe in Juanita. I like the mountlake terrace DD, but for my money there isn’t a butcher shop in the Seattle area that can touch this place.

That said if you're ever around mountlake terrace, there's a great smoked chicken place off of 99. I can't remember the name, but it's right behind Lynnwood Guns & Ammo.

Daaaamn thats alotta moneys even at half off for one steak you gotta cook yourself! I quite enjoy getting ~3 big ribeyes from costco for about $30.

Celebrating a promotion! Despite getting a Costco membership through work, I've yet to actually go... I didn't like the crowds even before CV, now I can't even imagine how awful the shopping experience must be

I reversed sear a london broil last weekend, after smoking it for a bit less than an hour and the way you cut it is def important. I a got to get more practice at it but didn’t turn out bad.

In my experience reverse searing is a more consistent way to get a  medium rare steak with a good seat on the outside. Nicely done!
