Is there a term for this sort of interlocking ends feature on a pair of sliding doors? It’s kinda like tongue and groove, but semicircular .

It's basically a rebate. Usually done with a spindle moulder or router. You can get bits custom made to match it if required.

Dado is (I think) when you do timber moulding on a face rather than edge...I think.

Rabbet is on the edge and the cut leaves two sides. Dado is a cut into the face. I learned this morning that a cut across the grain is a dado, with the grain is a groove.
That still begs the question what to call the parts of that door. I think it would be a to ngue and groove.
