I did some chicken too, and some ribeyes. I marinaded all of it and turned it into fajitas.

I’ve become very fond of that grilling tray. I despise washing the grill, and this eliminates that issue (though the tray can be tough to wash, at least it fits in my sink).

1/2 C extra virgin olive oil
1/2 C balsamic vinegar or other vinegar (we used balsamic)
1/4 C soy sauce
1/4 C Worcestershire sauce
1/8 C lemon juice
3/4 C brown sugar
2 tsp dried rosemary
2 tbsp Dijon or spicy brown mustard (we used Dijon)
2 tsp salt
1 tsp ground black pepper
2 tsp garlic powder
The recipe calls for some of the marinade to be reserved for basting. I just poured it over the chicken about half way through cooking. We marinaded it in a zip lock bag, and they said you can take the left over liquid and boil it to use for dipping sauce. We used the juice from the serving plate, but more would have been better.
The marinade itself didn’t taste very good after we mixed it, but it came out brilliantly at the end. Really tasty.
