I was gifted a bear roast the other day. Arizona black bear taken in northern Arizona with a bow.
Having never cooked bear before, I decided to go with something I knew was sure to cook off any roundworm. I went with a bourguingnon. I browned the meat in some bacon fat, then added a bunch of veggies, potatoes, crushed garlic, some stock and two cups of wine. Seasoned with sage, thyme, pepper flakes, bit of salt and pepper and let it cook in the dutch oven at 300F for three hours.
I thought it would be gamey, more like deer. Tasted straight up like pot roast. My kids loved it. I was also given two deer roasts that I’m looking forward to cook up.
Paired it with some Egees. Tucson locals will appreciate that pairing.
