Kinja'd!!!

(not me, I want a cook partner stove though...kinda)

Im all kinds of blocked up creatively for food so I am seeking your help in pulling a c-c-combo breaker. I am having a picnic dinner tonight and I am looking for something more than sammies and fruit. here are the caveats

I have a fridge, a crockpot, a stove and a pan as assets. (more if needed but probably not)

If not today Im at least looking for some good ideas for a hot trail meal to mix it up.

I will also say that for today thin k of the pickiest eaters you know and simple is best. Im also open to more creative ideas.

Thanks.

What about... chicken curry over rice? You can pre-make the rice, or the whole thing, and combine on-site.

Or! Quick-pickled vegetables (cauliflower, broccoli, onion, garlic, etc) over noodles.

Or the easy route- egg and cheese tacos. They travel well. Just bring your favorite salsa along.

I don't mind these actually but I was thinking a little less speed and a little more fancy

Cold fried chicken, hot sides, ice cold Boone’s Farm Strawberry Hill (since you fancy).

I second tacos. Egg and cheese are good, but you could cook up the meat in advance and reheat, or just some meat you can quickly cook on the spot. People can fill in veggies/condiments to their liking, and you’re good to go!

Even a green Thai curry? Bummer.

But definitely think about tacos. Easy transport, easy assembly.

You had me at “crockpot”... I always figure for low-overhead, tasty-and-savory trail food a slow cooked stew, chili or hearty soup hits the spot.  Especially with a pan to brown the chicken or meat before it goes into the pot.  And, slow cook whatever veg, beans, potatoes and seasonings you have.

Sausages (ideally fat ones but works as well with “classic” ones) cooked in wine (need to be acidic, non sweet, ideally not too fruity and not tanic ) and onion sauce or marinated steaks with wine and shallot sauce (but i also like it the other way around) ; i usually add a bouillon-cube and/or herbs to be even tastier .

Its simple to do and can be eaten directly on a sandwich or with rice, pastas, polenta, fries , lentils or a salad for example and gets even better after being re-heated (or eaten at room temperature ) .

My favorite meal on scout trips was fried fish. That may be a little too elaborate for your trail needs.

I love curries, there's so much variation in what you can get. Thai green is awesome, but I also love the yellow one with coconut milk, chicken, and potatoes. Then we get into Indian vindaloos and dopiazas which are also amazing.

Pulled pork?  I guess unless you have an instapot it’s too late.

Tortilla soup.

Put shit in crockpot with choice of meat (or extra potato), ready in 3-6 hours.

The farmers market near our house has a lady who makes some AMAZING curry bases of all sort, Thai, Indian, Penang, etc. mix in some veggies and peppers, stock and protein of choice, and they’re spectacular.

Also, this guy’s recipe doesn’t suck.
