Grilled scallops and red pepper/truffle risotto. Could have been prettier , but who cares, it was delicious. What’s for dinner, Oppo?
Full of the sound of the Gran Fury, signifying nothing.

Where do you buy scallops from? I order them at restaurants whenever I’m in the mood but would certainly enjoy having them at home too! Dinner today will just be some reheated chili and homemade peanut butter oatmeal cookies for dessert. Granted I had dessert first though because I'm an adult.

I made a
pumpkin and chicken soup with 7 grain rice and quinoa, and a toasted bagel. I also
made some mini meatball subs and mozzarella sticks.

Any grocery store with a good fish department, which is admittedly easier in western Washington than nearly anywhere else. A lot of nicer stores elsewhere still have decent frozen ones though.

Smoked a chicken that was killed at way too young an age.

Looks delicious! I wish i could get my kids to eat anything aquatic, but no. I am excited that i have a huge local protein order coming chorizo, pork sausage, chops, ground beef, steaks, roasts pork and beef, fresh eggs, fresh mozzerella... prob 12 lbs minus the cheese and eggs! Finally off the soup/pizza/pasta diet (and yes veggies coming too!) Corona diet does not have to mean eat like a college student! Very well done sir!

Nice! Love those local CSA-type boxes. No commute and my family stuck in a different country = lots of cooking for one and time to do it.

I made burgers with fancy™ 93-7 organic ground beef on cast iron (ran out of propane yesterday), with guac, bacon, bbq sauce, and carmelized onions. My wife made baked russet potato wedges for a side.
In my defense, the buns were whole wheat, so it’s super healthy.

This pic isnt pretty, but i was accidently sent ramen last week from the regular grocery (obviously they didnt want it back) so I did ribeye ramen and poached eggs for my first time. My 15 yr old loved it

Burger with all the fixins and then some sounds great to me. It’s like a whole balanced-ish meal all in one bun!

Made pizzas with the sauce replaced with pesto. It makes all but the oiliest pizzas I’ve encountered seem reasonable. Topped with mozzarella cheese (plus mushrooms on mine) and baked at max temp (550F, convection) on my pizza stone. Didn’t take a picture, but they tasted pretty good. The cheese melted and the crust got a little blackened on top of the bubbles. Not bad for such a low temp in a home oven, imho.

Crispy flat-iron chicken thighs. Deboned chicken thighs with skin on, seasoned with salt, garlic and herbs, and cooked in cast iron with butter and olive oil. Pressed while cooking with smaller cast iron pan. Served with steamed greens topped with garlic, parm, asiago and romano cheeses.

Sounds good! Interesting technique for the chicken.
