Since I’m at home and we need to use up all the leftovers, I opted to have breakfast for lunch. We didn’t have any leftover biscuits, so I toasted up an english muffin, heated up some sausage gravy, and fried a couple of eggs to go on top.

Probably making enchiladas because I opened one of my precious cans of Las Palmas this week and I need to burn through it because it only lasts so long after being opened.
If Costco comes through with a delivery of paneer and tikka masala sauce (along with toilet paper!), it’ll be paneer tikka masala almost every day next week.
Our WFH mandate was extended from March 24th to April 7th, which I expect to see extended again ultimately to at least April 24th...

Had to come into the office today and went to Eden Center for a Bahn Mi sandwich. It was fucking divine and only cost $4, I paid almost as much for the iced tea to wash it down.

ME EITHER. I have to drive to a bunch of local jobs in the next week or so and it’s pissing me off. I’ve tried offering up toilet paper in exchange but I bet the same people are hoarding both.
(Can’t speak for Pittsburg but at least the Indy airport had sanitizer stations everywhere)

I haven’t eaten at Qdoba. In central Texas , the go-to place is Freebirds (Yay!) or Chipotle (Boo!). I’m not a fan of cilantro, so the rice at Chipotle is just awful to me.
If you want a more formal tex-mex restaurant, there are too many options to choose from, each with its own take on the tex-mex experience.

Las Palmas is the only real canned enchilada sauce that is available in most grocery stores outside the southwest (where you can readily get the ingredients for enchilada sauce, so you probably wouldn’t use canned anyhow). It should be in nearly all Walmarts and major grocery chains, so it’s pretty cosmopolitan. Most canned ( and powdered) “enchilada” sauces are tomato based, which goes on entomatadas, not enchiladas. The properly-prepared peppers for making enchilada sauce are nearly unobtainable where I live.
Paneer is a fresh Indian cheese made from acid-curdled milk. There are similar cheeses made by many cultures (examples include queso blanco, cottage cheese, and mizithra off the top of my head). You can make it at home from milk that you bring to a boil and add an acid to (ex: lemon juice), then skim off the curds and put them in a cheesecloth to drain, knead to compress together, then with the kind you use for what I’m doing, you want to put it in a press in a cool place to press out more liquid until it’s a firm chunk. It has specific useful properties like being resistant to melting and being high in protein.
Chicken tikka masala is Britain’s unofficial national dish. It is supposed to be tandoori-cooked chicken tikka (marinated) in a creamy sauce similar to butter chicken (but with tomato). Since Costco stocks tikka masala in a tub (basically combining the flavoring of the marinade with the typical sauce), it’s pretty easy to make. We get a lot of Indian food at work, so I miss it when I can’t go there. I’ve been wanting to make some with paneer instead of chicken for a couple weeks now, but couldn’t find paneer in my local grocery store (and it was apparently sold out at my local Costco)...

We really only make enchilada casserole and that’s maybe once a month. Enchiladas really aren’t part of our menu. I took a look in the pantry. We have Old El Paso “red” enchilada sauce and you’re right, it’s tomato-based.
We’ll eat Indian food, but that’s another thing that’s not part of the regular menu. There’s one indian restaurant in Baton Rouge and I’ve been there maybe five times in over 10 years....

I had a mish-mash of leftovers. Some salad, half a hamburger (in bread). I also tried frying some mash potatoes. It didn’t go as well as expected, but still tasted okay.

My wife was watching some show where they made potato pancakes. They looked pretty tasty. It reminded me of the salmon croquet te s my mom used to make. We visited my great-uncle in Washington one year and he took us salmon fishing. At the ramp was a small cannery that would trade your catch for freshly canned salmon which they then canned for trade/sale. We made the swap (easiest fish cleaning I’d ever done) and my mom made croquettes from those a couple of days later. Dang, those were good!
Now I’ll have to dig in the pantry to see if we have any salmon. Maybe we’ll just make potato croquettes instead.

That sounds tasty.
In my case, my mistake was trying to make them from mash potatoes made from potato flakes. They were way too wet, and when I tried to fry them, it splattered everywhere. I have done it in the past with regular mash potatoes, and they turn out not too bad. It’s the sort of thing that my mom used to do with leftover mash potatoes a day or two later.
As for salmon, we used to have something similar as kids. I’ve done it before as well using canned salmon. Toss in an egg and some bread crumbs, maybe a little seasoning (dill?), and mix it together, then fry it in a frying pan. I’ve referred to them as salmon burgers, but a croquette is probably a better name for them.
My 3 year old likes what I refer to as “crispy potatoes”. I shred them on a cheese grater and fry them in a frying pan with an unhealthy amount of oil.

I’ve had to learn to cook my own American comfort food over that past 21 years of marriage. My wife is a wonderful cook...a wonderful Chinese cook. Traditional American is outside her wheelhouse. It works for us.

My wife is Hispanic. There’s some overlap in our food traditions, but there are some serious gaps too.
