I think it might be because of that dynamic pork control post earlier.
About 2.5 years ago I ate this:

Low cost - I think it ends up being around $11-13 bucks for a massive piece of fried pork loin, shredded cabbage with a choice of many delicious dressings, with rice and miso soup. This photo also looks like the white balance is too warm and makes the tonkatsu look burnt, but I can assure you it was not.
The tonkatsu was incredibly crunchy and well seasoned, but the taste I remember most were the salad dressings. They had four different kinds, and I still can’t figure out what the fuck they were and I’ve given up because it made that plain, shredded cabbage into something so yummy and accompanied the pork and rice so well.
Anyway , I think we all need some dynamic pork control in our lives.

best tonkatsu I’ve ever had was about 15 years ago in Iwaki. Fried to juicy perfection because they don’t cook pork to crumbly death in Japan.

So much good tonkatsu in Japan - I love the fact that restaurants tend to specialize in one thing and doing that thing well.
There’s a place I want to try on Jeju-do island in Korea, but people wait in queues overnight just to get a ticket to come back and eat later. He sells it for $8 and it’s supposed to be fucking legendary.

yep, tonkatsu was what this place did. thank god we had ch aperones since Iwaki is about as far from a big city as you can get in Japan. which meant if you couldn’t read/understand Japanese you were behind the 8-ball.

Pork loin is a great value and easy to make into may delicious dishes.
