So, I was trying to make that one dish where like you’ve got your thicc noodle (in this case, fettuccine), and you cook it, right, then you like put it in a pan at a low heat and like crack an egg over it with fried prosciutto, right, and it’s all silky and savory and whatnot.
Well... It doesn’t look like when my wife makes it and certainly not how I had it at a restaurant last year. It’s also very dry even when adding the brothy fluids of boilage. I think I didn’t get it out of the pan quickly enough when frying, and didn’t keep it sufficiently moist. I totally fucked up this dish.
On the plus side, it kind of tastes like eggs and bacon, which is delicious... for me . I wouldn’t serve this to someone I was trying to impress, though.
The salad has spinach, raspberry walnut dressing, almonds, chopped apple, goat cheese, and dried cranberries. The bread is of a whole wheat baguette.
Ah, well. Better luck next time, ol' chap.

This has very little to do with your very appetizing looking breakfast, but now I want raisin toast (which is what I initially thought your baguette was)

I’m a huge proponent of breakfast for dinner.
As for the dryness, maybe rinsing the starch off the noodles with cold water, then tossing them in a light olive oil before tossing the egg on? I’ll bet the stickiness is the starchy water you boiled them in, heated up and turned to cake.

Its called pasta carbonara and y ou’re supposed to remove the dish from the heat before you add the eggs. The heat from the cooked pasta will do the rest. That’s probably also why the dish was dry as the eggs were basically cooked.

Well, if you’re doing a sauce or a roux, I agree with your fundamentalism.
If you’re doing something else, give the noodles a chance to breathe, and don’t let em turn into a sticky mush.

Unfortunately we just had the one. We had three that were... almost usable, but the other two basically rusted apart due to extreme -- EXTREME -- neglect.
