Since this place is going down in flames, might as well mention that in the past few months I’ve settled back in to being a mostly vegan vegetarian instead of a full vegan. I still cook many vegan things but ultimately decided I didn’t want to go through the hassle of ensuring every last packaged food item was without eggs or dairy, and sometimes I just want to eat an everything bagel omelet with !!!error: Indecipherable SUB-paragraph formatting!!! and pub cheese sandwich.
My thought process was, “well the bottom of that small skillet is kinda sorta like the size of a bagel...” so I made a sandwich-y thin omelet. It is in fact kinda sorta like the size of the bagel, if one is charitable with what qualifies as kinda sorta like the size of something.

I’ve liked everything I’ve tried from Garden. Especially the Chick’n. It’s the closest in texture to chicken that I’ve found.

I tried to stay vegetarian for a few months, I have eaten amazing food at some places but I don’t seem to be able to do it myself. Most of the time I would say I’m 2/3 vegetarian , I don’t eat red meat and I mainly have birds and fish unless I’m somewhere and it’s awkward to say no. My metabolism is pretty high and I have to do physical work, I’m not sure exactly what all my issues were but I felt weak and tired.

I think that’s a reasonable choice, it’s still animal friendly since eggs/dairy don’t necessarily need to be cruel to animals depending on where you source them.
A breakfast sandwich with sausage is one of my favourite things to eat, I don’t find breakfast sandwiches with bacon or ham to be as tasty.

You need one of those smaller pans that is almost exactly bagel sized. I pretty much live on breakfast bagels/sandwiches and having a pan that size has been amazing.
Toast the bagel in pan, cook egg, veggie patty, assemble and toast again in pan.

I have nothing against vegans, but I don’t know how you survive...some of the vegan food is BLOODY EXPENSIVE. How do you guys afford it? 0_o

You’re talking about packaged manufactured things which are not the main thing most vegans or near-vegans subsist on.

True but, at least up here, even certain plain ole fruits and vegetables are really costly other than basics like potatoes, etc :(

There are some real ethical concerns with eggs and dairy that I won’t mention here. I still have those concerns. U ltimately I decided I’m not going to be a mass consumer of those things but will allow myself a certain degree of flexibility.

I have 2 sets of pans already not going to buy more. I used my 2 small skillets and did the sausage in the wider-bottomed one, and the omelet in the one with the narrower flat bottomed part in the middle, but the curve of the sides is apparently gradual enough to result in an omelet wider than the flat middle of the pan.

I’ve thought about getting eggs from a friend/acquaintance with their own chickens outside the egg industry, but don’t have such a friend or acquaintance. Raising chickens isn’t possible in my rental townhouse with a postage stamp of a back yard in an HOA-managed neighborhood. We’re buying a house in the next couple years but as we’re trying to stay rather close in to the city that may remain impossible even without an HOA.

We’ll if you’re ever up PhillyBurbs way pls take some of ours! It’s 100% my wife (the animals and the gardens) but it’s really changed what I eat.
You could get away with a couple in a small coop, but yeah letting them out to run around everyday is part of making them happy.
