The follow up to Pizza Attempt #1 last week has been a massive success! Big thank you to all of Oppo for your suggestions and words of wisdom. I’d like to highlight 66P1800inpieces (below) because I’m pretty sure he trained under Jamie Oliver or something. I had a much better dough this time because it was less hydrated, sat overnight in the fridge. A lso the yeast definitely worked much better this time .
I still went with the old crisper pan but with thicker dough, less sauce, more cheese (slightly too much), and toppings on top. Higher temp to 425F and longer time at 17min with a turn half way. 8/10 This time :)

Looks great. Thank you for the shout out. No training, I’m just cheap and like eating pizza. I do love the tried and true sauce and cheese but to keep the wife happy I do mix it up. Next after the traditional pie is regular dough, a drizzle of olive oil, mushroom/walnut, and a little goat cheese. Cook as normal and once you pull it out top with a big handful of arugula . By itself arugula is bitter but on this pizza it is fantastic. The mushroom walnut mix is roughly 1/2 cup walnuts and 5 oz of mushrooms and a little salt (feel free to play with the proportions) . Blitz them together in a blender until almost fine and spoon on the pizza and spread it out into a thin layer.
