It takes a while, but you get used to life without it. Be thankful you can still enjoy spaghetti sauce as it should be made.
I can’t have onions or garlic, or tomatoes without adding baking soda to reduce the acid. So Italian food for me is no longer very enjoyable to eat.

Best of luck in that endeavor, I have to admit that whatever you’re making there looks tasty. My wife has gone gluten free recently, though she’s not Ciliac, because it makes her feel better, which she really does. So that’s wonderful and i support her 100%, b ut i t’s... difficult. For me.

About the only thing without sugar besides some meat (and not all... some meat is covered in sugar, too) ,

This is smart. We’ve been eating whole grain pasta for a couple of years. Guests that have eaten with us have never known they were eating whole grain pasta until told afterward.

Spaghetti squash pizza boats are pretty good. Other than that you could do cauliflower pizza crust. It isn’t the same as dough but it will get you there.

We’ll sometimes use some baking soda to reduce acidity, but too much really dulls the flavor.

The mouth feel is there. Add some butter and salt and it’s not bad. First time I’d tried it. My entire life has been an ongoing white bread experience.

And there’s some carbohydrate chemistry about things turning to sugar or whatever. But can certainly cut down drastically.

Well, certainly about 95% less. Gave up beer 30 years ago. Pizza is going to be the difficult habit for me to kick. My life has been a 50-year white bread experience.

Sticking with any of it is the challenge. Lose 40 pounds now, but where are those pounds ten years from now? Typically, people find them again and more.

We do a lot of frying/browning cauliflower in the cast iron skillet. Then sprinkle on some lemon juice and a touch of salt. Really delicious, and grateful for IMMIGRANTS WHO PICK IT SO THAT CAULIFLOWER DOESN’T COST $17 A HEAD. (That was politics. Sorry. Well, not really sorry.)
But to your point, my wife has mentioned cauliflower pizza crust and we haven’t had a chance to try it yet. Missus is a very skilled hand in the kitchen and nutrition and food -- and doggos -- are her thing. She has a new friend at work who encourages her and my mother is constantly sending recipes. As well, we find ourselves among a handful of people who for various health reasons are trying to gain control of their eating. So it’s a nexus of factors.

good luck mate.. and yeah.. pizza will be a bitch.... its just a little too convenient to drop easy
(for me it has to be the beer tho.. i actually eat healthy and diverse like.. despite what my posts may tell you...but... im past mid 30 now and my body is no longer shrugging off the daily pint or 6....)

And it doesn’t help that the beer where you live is actual beer and way better than anything in this country, though to be sure, the US has many more and less- dismal beer options now than we did 30 years ago.
Thing is, I gave up beer because I’d met my wife and she’d never drunk a drop in her life and I didn’t wanna drink around her and if she wasn’t around, why would I do something then that I wouldn’t do if she were around? And drinking had been problematic a few times in my life already, so

I mix in cherry tomatoes, a balsamic reduction , olive oil, basil, garlic and some mozarella. You can eat it cold like that too.
