This is what happens when words get passed between many different Middle Eastern cultures. (Also both spellings are, AFAIK, valid Romanizations of the various words.) Basically it ends up being applied to all sorts of cooked meats.

Shish kebab is what we know in America , but there’s plenty of other forms. Doner kebab is the other common kind known in Western cultures (although not America), although shawarma and gyros are very closely related.
