I don’t get why the artist had the car come out the bottom when the whole point of the shuttle was to house the payload in the GIANT doors on top??

Probably because it was more reminiscent of launches from a mothership, like this Douglas Skyrocket detaching from a US Navy P2B.

I watched the video again on the full-screen setting and yes, it seems the front wheels are spinning. It is not very clear, however, whether the rear ones are doing it too or not.

I suppose the idea is that the car is being “driven” through space; at some stage the astronaut actually steers (one can clearly see the front wheels turning) and the car does indeed change its course.

On the other hand it could just be that the animators are much more into astronautics and science-fiction than into cars and really thought the Corvette was FWD.
