I’ve been wondering the same in the past, as it’s the same on this side of the big pond. My theory is that it has something to do with the units in which they receive ingredients: they receive eggs for the mayo in liters, while the tomatos are delivered as kilos. (At least that is what my brother told me he saw at a sauce factory)

Maybe because ma yonn aise is like cheese it’s weight can vary to it’s volume*, where tomato ketchup is consistent .

*it’s why it was hard for European cheese to get into the Japanese market on any large scale. You can cut two identical sized pieces of cheese but the weight will vary ever so slightly.

Its a ruse. It’s not sold by the volume or weight, its sold by whatever package they decide to use. Whether to label it by weight or volume I assume is a decision made to give the consumer confidence that they are getting more for their money. In other words, whichever number is bigger. I’d rather have 32 fl. ounces of mayo than 12 oz. by weight.

The truth is that I don’t know. I make my buying decisions on price/unit measurement when choosing a package size. Cereal is the worst at this...manipulating box size and depth . Price on a single type of cereal that I buy can vary from 15 cents/oz to nearly 30 cents/oz depending upon packaging.

Oddly, the stuff they were selling before was also real mayonnaise as far as I can tell - I think they rebranded/relabeled it after the whole Unilever/Hampton lawsuit about Maynonnaise labeling a couple years ago.
