I often wonder why Great British people eat a lot of Indian food, which contrasts so vastly to their own cuisine (bland). T wo opposing palettes, really.

Korean food is yummy too. What dishes are you referring to? I’ve had a fair amount of it, but it’s been a while - other than kimchi, I’m trying to recall what’s spicy but having a brain cramp.

True Story- my first trip to England was a business trip about 20 years ago. The last night, we were free, and two of us had never been there before. We went to the hotel concierge and asked for a restaurant recommendation.

He offered Indian, French, Italian, Greek, you name it. Everything but English. We told him it was our first trip and we wanted English food. He looked at us strangely and said “ why?”

We ended up at a pub eating fish and chips and beer - it was delicious.

Same here - there is so much going on in Indian food, I’d hate to miss out due to the heat. But I do have a fairly good tolerance for the heat.

In the last 20 years Britain has really opened up about it’s food.

The traditional British fayre is heart y warming food to sustain you but also be very enjoyable when done with a little more enthusiasm .

Just keep some cucumber yoghurt nearby.

A colleague and I went to an all you can eat Indian place. He wanted to try a p hal but I was adamant he doesn’t and said to work his way up, but he still went for the vindaloo. I said to try a little sauce with quite a bit of rice and gradually add more sauce and less rice to get used to it.

He ignored that advice and went straight into a large fork of chicken vindaloo. He was gasping for breath, sweating like he ran a marathon and went for his pint of lager I took from him and went to get some cucumber yoghurt and broke up a plain naan to eat it with.

That was at about 11am and he phoned in sick for night shift that night.

Ha! I love vindaloo and usually order it, but not tonight. Chicken biryani and channa masala. The channa masala was really spicy tonight.

This is a noble experiment! My sense is that it’s fairly linear. We have been ordering from our local place regularly lately, and it seems like they’re getting to know us and kicking it up a notch each time we get it.

At first, they didn’t even ask us if we wanted it spicy, but now they do. And it’s the same woman ( owner?) always answering the phone.

Chinese food - kung pao - is more logarithmic if you’re gwai lo like me. It’s hard to convince a place to make it spicy, by when they do, look out!

Derby has improved over the years, I’d still class it as more of a drinking destination but there are more and more places doing good food .

Went on a bender a while back in Nottingham. Nothing like drinking in a pub with nine different bars in it or having a few beers in an old church.

Saag paneer is truly the Gods’ dish.  I also love a good lamb vindaloo.  I still need to find a decent Indian place in New Mexico.
