When I was a kid my mom would make us “Frito Pie” but used the taco Doritos and velveeta cheese!

That looks delicious.
I forgot to eat and ate lunch late, so it sort of became “lunner.” Chicken burrito from Freebirds. Extra spicy.

Well, SigOther out of town, so I’m making bolognese for a friend tomorrow (will freeze most of it) and homemade pasta. I suppose I could make a Dorito pie on Sunday - 3 weeks on my own, so I’ll need something to eat.

The picture isn’t of mine, but I made Mexican stuffed peppers on the grill. Made with chorizo, rice, tomatoes from the garden, onion, garlic, cheese, and sour cream.
First time making it, and it was really good.

Better cooked slow in the oven, but I was hungry, so microwave. Cube the steak, wine, water, 1/2 package of taco spice. Let it sit for a day or two or freeze it. Yum.

I’ve made similar - you could toss a few black beans in there, or taco seasoning, or hot oil, or ... anything. The chorizo is inspired. Or even mole ....

sometime when I have leftover pulled pork I may try it with mole.
Next time I may change out the fresh tomatoes for salsa. I think I’d rather save the garden tomatoes for something where they can be the highlight.

You can use Muir Glen fire-roasted tomatoes (canned) and a bit of tomato paste for a stronger flavor. And pulled pork improves anything, except maybe a dessert.

Tonight I am hosting a BBQ, making hamburgers, mexican street corn, african bean stew, kelewele (spiced plantains), caprese salad, and bacon wrapped dates.
