awesome! I just did my first pig a few weeks back. question for you, has this pig been scalded? it still looks hairy to me. also you don’t really want to slather the whole hog in sauce before cooking. you can brine it if your looking to add flavor. but i’m new to this game i could be wrong. you really only want to keep the skin moist with a oil/vingar mix to keep from making leather. sauce could run the risk of burning.

No, I calculated the cost of raw stainless steel vs. a Chinese-made spit-in-a-box and bought one. “Bulk” stainless is NOT cheap :P
Kinda sad I didn’t make it... but I *DID* make this!
Some of those welds even look pretty decent... not a majority of them though :/

We scalded her partially, but we didn’t have a big enough vessel to get her all in, so we scorched off some... the burnt hair smell has faded, but it was pretty rich there for a while. Just the dry rub to start, and we’ll mop her as the roast progresses....

NEVER STOP THE HEAT! We had a power shortage about an hour in, and it didn’t turn anymore. Even a small generator couldn’t get it started, so we pulled the heat away for an hour and a half until power came back on.
Turns out the cool down period sealed the pores and the fat acted as an insulation, we just couldn’t get any heat into the meat. No matter how much wood we threw at it, it stayed at 45 degrees Celsius which is way too low for pork.
We ended up treating it like a Döner and sliced off the few parts that were edible way too late into the night when everybody was stupid drunk because they hadn’t eaten anything.
We also had a rotten corpse with fly’s eggs already in it to dispose off the next day.
Way to ruin a nice pig!
Edit: We called him Donald. That might have cursed the whole shebang?
