...I shall now share with you the best recipe for banana muffins*:

½ cup margarine

2/3 cup milk

2 eggs

2 ½ cups flour

1 cup sugar

2 ½ tsp baking powder

½ tsp baking soda

1 tsp salt

2 ripe bananas

½ cup chopped walnuts

½ cup choc chips (plus extra for eating)

Throw everything into your kitchen aid mixer. What’s that? Don’t have one? Well, go out and get one now. Go on, I’ll wait. . .

. . . Okay, now blend it up nice. It helps if you freeze the bananas first and then thaw them so they’re nice and mushy. Bake in muffin pans prepped with cooking spray, and bake at 425 F—what’s that? You’re Canadian or European? We’ll get your calculator then, I’m busy here. Where was I? Oh yeah, bake for 20 min. Eat warm before your family gets the best ones. You’re welcome.

While this looks like a good recipe, I too have a different favorite. I prefer my banana in a bread over a muffin, but this can be adapted easily:

1 cup butter, softened

2 cups white sugar

4 eggs

6 bananas, mashed

2 teaspoons vanilla extract

3 cups all-purpose flour

2 teaspoons baking soda

1/4 cup unsweetened cocoa powder

1 cup lite sour cream

1 cup semisweet chocolate chips

Prep 10 m

Cook 1 h

Ready In 1 h 10 m

Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.

In a large bowl, cream together butter, sugar and eggs. Stir in bananas and vanilla. Sift in flour, baking soda and cocoa; mix well. Blend in sour cream and chocolate chips. Pour batter into prepared pans.

Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of a loaf comes out clean.

Also, good on you for trying to ease the blow of the first day of school. Another thing that I think pretty much every kid likes are rice krispie treats. Super easy snack/treat for them in their lunch.

I can’t take credit for the recipe above. It’s just one I’ve been using for the last 10 years or so that I got from allrecipes .

I just don’t have a kitchenaide mixer. Never really had a need for it. Don’t cook much at home from scratch. It’s a wish list item though.

I’ll have to dig out my moms Cottage cheese pancake recipe. It’s made in a blender, I have one of those.

Allrecipes is good. The internet is there, I say why not use it to find what works before I try it.

My recipe was actually a quick bread recipe that came with the bread machine we got as a wedding gift. It works so well, it’s become my favorite. I adapted it to muffins so that I can make a batch and freeze them. That way, my girls can grab and nuke one for a quick breakfast or snack. I like yours though, especially with the sour cream. I may have to give that a try.

Haha. I understand. While I was joking, the truth is that once I got my KitchenAid mixer, I couldn’t believe how I ever baked with out it. It’s so far above everything else on the market. But it is pricey if you don’t use it much.

Yeah, post that recipe. I’m curious to see how cottage cheese works into pancakes. I wouldn’t have thought of that.

I knew some food snob would chime in about that. ;)

Sometimes I bake for family with dairy issues; so, I have standardized on margarine sticks. It works fine as long as you account for the salt content. When a recipe calls for margarine, I use margarine. When it specifies butter (which by definition to me means unsalted), I go get butter.

Basically replace milk with cottage cheese, it turns out like a crape. But also easier to pour from blender

It’s made with Bisquick so it’s not gluten free, and since 1/2 my family is, we don’t have it any more.

Blend in blender then pour on hot pan, then bubbles are pretty much pooped flip, I’ll butter and sprinkle powered sugar and stack about 5 high.

My mom says she some times will add more bisquick to thicken them up.

I’ll see about making some this Sunday.
