The only negative thing about a mini quiche is the knowledge that you could be eating a maximum quiche. Om nom nomlette pie!

Add a little heavy or sour cream to the eggs, and make sure to saute the veggies before adding them.

will do. I’ve been using 1/2 and 1/2 for that so maybe I’ll go sour cream next time
