I promised a pop tart ice cream sandwich, and so I shall deliver.
First of all, I think it would be better with an unfrosted pop tart but Target didn’t have any.
I lightly toasted the pop tart and added a generous heaping of strawberry ice cream. Singular pop tart because I’m not quite ready for suicide by sugar overdose.
The final product.
Excuse me while I go run a few hundred laps around the office building.

I would have place it in the toaster first then the ice cream. Warm and toasty on the outside, yummy cold ice cream in the middle.

I used to do these for breakfast in high school. Except I did an open faced sandwich. You can get more ice cream per tart that way.

That sounds amazing but I wasn’t about to drive around all day looking for supplies! This was the junk food already on hand.

I had a roommate forever ago that used to put the PopTarts in the freezer. She ate them like that all mega cold. Super odd

I’m a big fan of the Freiburger combination of putting peanut butter onto brown sugar cinnamon pop tarts.

GLORIOUS! I will have to try this now, as well. Seeing as I have unfrosted blueberry poptarts, I am not sure what flavor of ice cream to use, though.
I am certain that I can’t go wrong with French vanilla...but it seems so uncreative. Seeing as how I manage to reside in and yet loathe Texas, do I dare acknowledge the high quality and creativity of a Blue Bell flavour? Would cherry vanilla be too many (two many) types of berries in an ice cream sandwich?
My mind is spinning.

Cherry vanilla sounds like it should mix well with blueberry.
I’m still recovering from the sugar coma, the frosting was a little over the top. Like I’m seriously going to eat salad for a week now. But I have no regrets. NONE.
