I just put 196 moons into my Odyssey at once. I’ve seen others do more, but still this is oddly mesmerizing.

Ok so how exactly do you do this? I’ve thought but how can you travel between worlds without visiting the Odyssey and putting in your moons? Is it a game of strategic painting links?

Yep it’s just the paintings. Once you learn where they all are you can loop through the subset of kingdoms that have paintings (8 of them I think) indefinitely without using the Odyssey. Once you’ve defeated Bowser the moons tracking isn’t kingdom-specific anymore so they just keep adding up even as you move through paintings.
