I love me a dirty taco shop, but for the price and quality, it is actually really hard to beat Chipotle. When I have the choice, I usually go local, but it’s hard to deny that there’s a certain value in consistency and widespread availability.

Now, I’ll give them credit: you can tell it’s a roux, and a natural cheese sauce BUT it just doesn’t taste good at all. They missed the mark.

I haven’t tried it yet. I think they started i in response to Qdoba, which has had a few kinds on their menu for a long time. The problem is that the Q’s queso is awful and will give you the galloping shits, plus their food is pretty harsh (better than Taco Bell, but I’m not sure enough better to justify the price difference).

You don’t get this stuff at a real taco shop, so why bother? I’d add finely grated queso fresco before I’d bother with some silly sauce. Slap a little on your guacamole if you want something tastier to dip in.

Chipolte makes up a considerable percentage of my weekly diet, but their queso is so nasty. I tried it once, the worst part is they charge you $1.35 for a splash of cheese water on your burrito.

The problem with Chipotle’s queso is simple: they want it to be made of real ingredients but also stable enough to sit on a steam table and be served over a period of time. This is not possible.

Real Mexican queso fundido is made with particularly melty cheeses, and you basically cook up whatever stuff that’s going to be mixed in with the cheese (peppers, chorizo, etc) and then add the cheese at the end, let it melt, and serve immediately.

Queso that’s like a fancier version of convenience store/movie concession stand nacho cheez still relies on some sort of American cheese (a.k.a. pasteurized processed cheese food) which includes stabilizers and emulsifiers that even out the texture, because American cheese is basically a bunch of real cheese scraps mixed up with chemicals to make it shelf stable. These chemicals are what give something like melted Velveeta its signature silky texture, and what allow these queso varieties to be made ahead of time, held warm, and served up over time.

Chipotle’s serving model isn’t set up to make individual servings of queso fundido every time someone wants a spoonful of queso on their burrito. They need to be able to spoon it up. But they insisted on not using any kind of American cheese in the recipe. Instead, they want their not-necessarily-expert cooks to make, from scratch, bechamel sauce, and add cheese to it until it melts. But bechamel sauce requires first cooking a mixture of butter and flour then adding milk to it all while whisking constantly at the right temperature. and if it’s not done right, it will very quickly turn into a gritty, gloppy mess.

Thus, we have Chipotle’s shitty queso.

They make a quesadilla and use it as the tortilla to make the burrito. Heavenly!

TBH chipotle meats have little to no flavor.

I’d eat at most other places, given the choice. But sadly, India literally has almost no mexican/tex-mex. So I’d happily get chipotle.

I don’t think those are everywhere. The only ones I’ve seen were in places with good taco shops or cities with decent (or excellent) mission/SF burritos. There are very few of them compared to Chipotle.

It’s not like tandoori chicken (which is heavily spiced), but it is a rather Mexican level of spice. If you want something heavily spiced/flavorful at Chipotle, get the barbacoa. The chicken is the next-best thing, followed by the beef.

Which meats do you like? Mexican food is really easy to make and has quite a few common ingredients in common with Indian food. I suspect you could easily pull it off. Easier than just about anywhere else I could think of outside of the Americas. I’d be happy to give you my pollo asado and salsa/guacamole recipes if you want them...

I like all the meats :)

I understand that mexican food has a different level and kind of spice. And I’m ok with that.

But I prefer traditional hispanic restaurants over chains (freebirds, chipotle, etc). For some reason, their meats seem to be more flavorful.

If you have a pollo asada recipie, I’ll be happy to give it a shot!
