In some ways, I actually WISH I was gluten intolerant. EG, I’d weigh a lot less.
On the other hand, I know the cons would far outweigh the pros...

Actually there is so much shortening in GF food, its actully less healthy for you. For instance an 8" GF cheese pizza has the same (or sometimes worse) caloric value as a full size gluten cheese pizza

But you do have to watch what you’re putting in your mouth more, and starchy food (because often wheat derived) in general is the biggest thing to look out for isn’t it? That happens to be my hangup. I loooooove my starchy stuff

starchy stuff is best stuff.
90% of my diet literally consists of pasta, pizza, sandwiches, rice, potatos.
I wouldn’t survive long on a low carb diet.
