Don’t like the current Yokohama ones, not grippy enough. I can’t seem to find any 235/45 R17's other than Pirelli PZeros, is this a weird tire spec?

Slightly...are you sure thats the OEM size? most VWs run 225/45/r17

I guess that’s OEM size, the current ones are 235/45R17 and every single tire guide/website tells me those are the specs for the Variant.
(Yep, just checked, the optional sporty wheels are 235s)

Do they offer Firestone Firehawks over there? Because I found a Firehawk Wide Oval in that size on Tire Rack, but that’s US.

Yeah, Brazil is pretty shit when it comes to choice, but I expected at least a few other choices. PZeros are a bit pricey.

Michelin Pilot A/S3 come in that size, as do the Pilot Supersports. Either is a good choice.
My WRX, when I finally get it, runs the same size tires and one of the above will likely replace the stock tires when I wear them out and/or if I dislike them.
